Panettone is a cherished Christmas tradition from Milan, enjoyed across Italy during the festive season as a symbol of abundance, warmth, and togetherness. Its signature light, airy texture and fragrant sweetness come from a time-honoured process that is far more intricate than ordinary bread.
Our Panettone is made using natural sourdough and a 48–72 hour slow-fermentation process, allowing the dough to develop exceptional softness, rich aroma, and a beautifully open, web-like crumb. We select only premium ingredients, including French AOP butter, Japanese specialty flour, sun-dried raisins, and fragrant candied orange peel, creating a depth of flavour and tenderness that simply cannot be achieved with shortcuts or commercial additives. Each Panettone is hung upside down after baking to preserve its height and delicate structure — a traditional artisanal technique.
